• Strawberry Waffles

    • 2 cups self raising flour
    • 2 cups strawberries
    • 1 cup vanilla yogurt
    • 1/2 cup milk
    • 1 egg

    Combine flour, egg and milk - mix until you have a smooth batter. Pour batter into a waffle iron and cook until golden brown. Top cooked waffles with sliced strawberries and yogurt.

  • Cheese Omelette

    • 3 eggs
    • 1/2 cup tasty cheese
    • 1/4 cup mushrooms
    • Parsley

    Beat together the eggs. Grate cheese, finely slice the mushrooms and parsley then add to the beaten eggs. Heat a small non-stick frying pan and pour in the mixture. Cover with foil and cook until bottom is golden brown.

  • Bacon and Egg Muffin

    • 2 rashers shortcut bacon
    • 1 egg
    • 1 english muffin
    • 1 tablespoon smoky BBQ sauce

    Fry bacon and egg (use an egg ring), drain on paper towel when cooked. Split muffin and toast. Spread toasted muffin with BBQ sauce then top with the bacon and egg.

  • Breakfast Burritos

    • 4 eggs
    • 2 tortillas
    • salsa
    • grated cheese
    • 2 tablespoons milk

    Beat together eggs and milk, cook in a small pan over a medium heat. Heat tortillas as per packet instructions, top with salsa, sliced egg and a sprinkling of cheese roll up and enjoy.

  • Cheese and Spinach Eggs

    • 3 eggs
    • 12 spinach leaves
    • 3 tablespoons cottage cheese
    • 2 teaspoons butter
    • splash of milk

    Melt butter in a saucepan, add spinach and cook until wilted. Beat the eggs with some of milk, add to spinach in pan and cook - stirring constantly. When eggs are cooked as desired remove from pan, stir in the cottage cheese and serve.
