Hot Caramel Sauce
- 1 cup cream
- 3/4 cup brown sugar
- 3/4 cup butter
Combine all ingredients in a saucepan. Slowly bring to the boil then turn down the heat and simmer while slowly stiring until sauce thickens. Serve hot over ice cream or fresh bananas.

Finely dice the parsley, chives and garlic. Combine with the butter and lemon juice. Lay down a sheet of cling wrap and place mixture in center. Tightly roll up the cling wrap to form a log. Place log in fridge to set, slice and serve with steak or fish.
Remove seeds from chili and finely dice. Add all ingredients to a jar with a tight fitting lid. Shake mix until sugar has dissolved. Dipping sauce makes a good accompaniment to spring rolls.
Finely dice onion, crush garlic and cook with the butter until soft. Add the flour and simmer for 2 minutes. Whisk in the beef stock, simmer whilst stirring until gravy thickens. Add more flour if you like a thicker gravy.
Simply combine all ingredients in a large bowel and mix together well. Dressing is best served after allowing to sit in frindge for a couple of hours so flavors combine.
