• Shrimp Fried Rice

    • 2 1/2 cups cooked rice
    • 1 cup peas
    • 12oz (340g) cooked shrimp
    • 2 eggs
    • 2 tablespoons soy sauce

    Heat some olive oil in a wok. Add peas and shrimp, cook until warm before adding the rice. Cook further until rice is warm then create a well in the center of the rice. Crack eggs into the well and cook whilst scrambling. Mix the cooked eggs through the rice add the soy sauce and serve.

  • Stir-fried Chicken with Thai Basil

    • 4 chicken breast fillets
    • 2 bell peppers
    • small bunch thai basil
    • 2 tablespoons olive oil
    • 1 clove garlic

    Slice the chicken breasts and bell peppers into small strips and crush the garlic clove. Heat the oil in a wok and add the chicken, peppers and crushed garlic. Stir-fry for 3 minutes or until chicken is tender. Remove wok from the heat and tear in the basil leaves. Serve with steamed rice or noodles.

  • Chicken Rice Paper Rolls

    • 1lb/450g chicken mince
    • 1 carrot
    • 1/2 small cabbage
    • 1/2 small onion
    • 8 rice paper sheets

    Finely dice the onion and together with the chicken mince cook in a frying pan. Shred the cabbage and grate the carrot, add to the chicken mince cooking until just soft. Spoon mixture onto rice paper sheets, roll into small 3 inch rolls and serve as a starter.

  • Thai Dipping Sauce

    • 1/4 cup fish sauce
    • 1 birdseye chili
    • 2 tablespoons sugar
    • 2 tablespoons lime juice
    • 2 tablespoons white vinegar

    Remove seeds from chili and finely dice. Add all ingredients to a jar with a tight fitting lid. Shake mix until sugar has dissolved. Dipping sauce makes a good accompaniment to spring rolls.

  • Teriyaki Chicken Wingettes

    • 2 lbs chicken wingettes
    • 1/4 cup sake
    • 1/4 cup soy sauce
    • 2 tablespoons mirin
    • 1 tablespoon white sugar

    Combine all but the chicken in a saucepan and over a medium heat cook stirring until sugar is dissolved. Allow the sauce to cool then marinate the chicken, preferably overnight. Place chicken into greased baking tray and bake at 400F for 1.5 hours turning every 15 minutes.
