• Paprika Chicken Skewers

    • 4 chicken breast fillets
    • 3 cloves garlic
    • 1 teaspoon smoked paprika
    • olive oil
    • coriander

    Crush garlic, mix with the paprika and a good drizzling of olive oil. Dice chicken and mix well with other ingredients. Feed chicken onto skewers that have been soaked in water, this prevents them from burning. Cook skewers on a grill until brown, serve with a sprinkling of chopped coriander.

  • Honey Pork Skewers

    • 1lb/500g pork tenderloin
    • 2 medium onions
    • 4 cloves garlic
    • 2 tablespoons honey

    Dice pork into cubes and marinate (preferably overnight) with the honey and garlic. Feed pork onto skewers alternating with a chunk of sliced onion. Grill over a low heat on a BBQ until pork is cooked through.
