• Trout with Basil and Balsamic

    • 1 whole trout
    • 1/2 cup basil
    • 4 tablespoons white balsamic
    • 1 clove garlic

    Roughly pound together the balsamic, garlic & basil. Lightly score both sides of the trout then cover with the basil mix, leave for a couple of hours for flavors to infuse. Cook in a 350F/180C preheated oven for approximately 20 minutes or until flaking of the bone.

  • Lemon Baked Fish

    • 1lb/500g fish fillets
    • 6 teaspoon lemon juice
    • 1 teaspoon lemon rind
    • 2 tablespoons butter
    • 1/4 teaspoon dried rosemary

    Place lemon juice, lemon rind, rosemary and butter into a bowl and heat in microwave until butter is melted. Place fish fillets into a shallow baking dish and pour butter mix over the top. Bake for around 25 minutes or until fish is cooked through. Season with salt before serving.
