• Mushroom Salad

    • 1/2lb/250g mushrooms
    • 1/2lb/250g green beans
    • 1 medium iceberg lettuce
    • 1 large cucumber
    • 1/4 cup french dressing

    Quarter the lettuce, roughly slice the cucumber and halve the beans. Place ingredients into a salad bowl and apply french dressing, gently toss before topping with the mushrooms (thinly sliced) and serve.

  • Bacon and Mushroom Penne

    • 1/2lb/200g Bacon
    • 1lb/450g penne pasta (uncooked)
    • 2 cups swish brown mushrooms
    • 1 bunch spinach
    • grated parmesan

    Cook pasta in pot of salted boiling water until tender, drain and set aside. Slice bacon and mushrooms, then cook over a medium heat for 5-6 mins or until cooked. Add spinach and cook for a further minute, remove from heat. Add the pasta and mix together well, serve with a generous sprinkling a Parmesan.
